Description

A delightful and creamy homemade strawberry ice cream that captures the essence of summer with fresh strawberries and simple ingredients.


Ingredients

  • 1 1/2 cups strawberries, hulled and diced
  • 2 tablespoons honey
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, mix the hulled and diced strawberries with honey, granulated sugar, and lemon juice. Let it sit for 15 to 20 minutes to release juices.
  2. Mash the mixture with a potato masher or fork until desired texture is achieved.
  3. Add the heavy cream, half and half, and vanilla extract to the strawberry mixture. Stir gently until combined.
  4. Pour the blend into an ice cream maker and churn according to manufacturer’s instructions for about 15 to 20 minutes.
  5. Serve immediately as soft-serve or transfer to an airtight container and freeze for 3 to 4 hours for a firmer consistency. Let sit at room temperature for 5 to 10 minutes before serving.

Notes

Consider adding crushed graham crackers or chopped nuts during the last few minutes of churning for added texture.
