Description

Authentic Mexican gorditas are thick corn tortillas that serve as delicious pockets for various fillings, perfect for any occasion and filled with rich flavor.


Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil, plus more for frying
  • 2 cups shredded chicken or beef
  • 1 onion, diced
  • 1 cup chopped fresh cilantro
  • Lime wedges, for serving


Instructions

  1. Combine the masa harina, warm water, salt, and 2 tablespoons of vegetable oil in a large bowl.
  2. Knead the mixture until a soft, pliable dough forms.
  3. Divide the dough into 12 equal pieces and roll each piece into a small, round disc, about 1/4 inch thick.
  4. Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  5. Fry the gorditas in batches for 2-3 minutes per side, or until golden brown and crispy.
  6. Drain the fried gorditas on a paper towel-lined plate.
  7. Cut each gordita in half and fill with the shredded chicken or beef, diced onions, and chopped cilantro.
  8. Squeeze fresh lime juice over the top before serving.

Notes

Experiment with different fillings like vegetables, beans, or various cheeses. The dough can be made ahead of time and stored in the fridge or freezer.
