Ingredients

  • 1 tbsp olive oil (15 ml)
  • 2 medium carrots, spiralized
  • 1 red onion, sliced thin
  • 1 red bell pepper, sliced
  • 3 medium zucchinis, spiralized
  • 1 tsp (5 ml) ginger, minced
  • 4 cloves garlic, minced
  • 4 tbsp soy sauce (60 ml)
  • 2 tbsp rice vinegar (30 ml)
  • 2 tbsp barbecue sauce (30 ml)
  • 1 tbsp vegetable oil (15 ml)
  • 2 tsp (10 ml) light brown sugar
  • Cashews for serving, if desired
  • Sesame seeds for serving, if desired


Instructions

  1. Pour olive oil into a big frying pan and heat it up. Introduce the spiralized carrots, thinly sliced red onion, and sliced red bell pepper to the pan. Sauté for 4-5 minutes until the carrots and bell pepper begin to soften.
  2. Next, add the zucchini noodles, minced ginger, and garlic to the pan. Continue cooking for another 2 minutes before taking the pan off the heat.
  3. Combine soy sauce, rice vinegar, barbecue sauce, vegetable oil, and light brown sugar. Mix well and ensure everything is coated evenly. Serve right away, and if you like, sprinkle with cashews and sesame seeds for extra flavor.
