Ingredients

  • 25 cup (60 ml) butter
  • 6 chicken leg quarters, split into drumsticks and thighs
  • 6 large Yukon Gold potatoes, cut into chunks
  • 24 cloves garlic, unpeeled
  • Salt and ground black pepper to taste
  • 25 cup (60 ml) maple syrup


Instructions

  1. Set your oven to a temperature of 400 degrees F (200 degrees C).
  2. Place the butter in a roasting dish and let it melt in the oven. Once the butter has melted, tilt the dish to cover the base completely, then add the chicken drumsticks and thighs, potato pieces, and unpeeled garlic cloves. Season with salt and black pepper, and turn everything over to ensure it is well-coated with butter.
  3. Cook in the oven until the chicken is fully cooked and the juices are clear, approximately 40 minutes, while basting the contents three times with the drippings from the pan. Apply maple syrup over the chicken and drizzle the potatoes with the pan juices.
  4. Put the dish back in the oven and continue cooking until both the chicken and potatoes are tender and have a golden color, about another 20 minutes. An instant-read thermometer should show at least 165 degrees F (74 degrees C) when placed in the thickest part of a thigh. For serving, squeeze the roasted garlic out of its skin and spread the softened garlic over the chicken. Pour the remaining juices from the pan over the chicken and potatoes.
