Ingredients

  • 8 bone-in chicken thighs
  • 1/3 cup (80 ml) extra-virgin olive oil
  • 1/4 cup (60 ml) lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon (15 ml) dried oregano
  • 2 teaspoon (10 ml) s dried thyme
  • 2 teaspoon (10 ml) s Dijon mustard
  • 2 teaspoon (10 ml) s kosher salt
  • 1 teaspoon (5 ml) freshly ground black pepper


Instructions

  1. Prepare the marinade: In a small bowl, combine the oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and black pepper.
  2. Marinate the chicken: Place the chicken thighs in a large bowl and cover them with the marinade. Let them soak in the refrigerator for at least 1 to 2 hours, and up to 8 hours.
  3. Get ready to bake: Set the oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and pour any leftover marinade over the top.
  4. Cook the chicken: Bake for 40 to 45 minutes, until the chicken is completely cooked and reaches 175°F (80°C) on a meat thermometer. You have the option to baste the chicken occasionally during cooking. For crispier skin, switch on the top oven broiler for the last 2 to 3 minutes. If desired, embellish with lemon slices when serving, especially for a dinner party.

Notes

  • Finely mince garlic to distribute flavor evenly in the marinade. Allow chicken to sit at room temperature for 20 minutes before baking. Boil any leftover marinade briefly to use as a safe sauce.
