Ingredients
- 1 cup (240 ml) uncooked jasmine rice, rinsed
- 1 (13- to 14-ounce) can coconut milk
- Salt and pepper
- 1 (1 1/2-inch) piece ginger
- 2 large garlic cloves
- 2 limes
- 1/2 cup (120 g) roasted and salted peanuts, crushed
- 2 tablespoons (30 ml) almond butter
- 2 teaspoons (10 ml) granulated sugar
- 2 teaspoons (10 ml) sambal oelek
- 2 cups (300 g) ripe cherry tomatoes, halved
- 1 cup (about 30 g) roughly chopped mixed herbs (such as dill, cilantro or mint)
Instructions
- Prepare the rice as directed on its package, substituting 1 1/4 cups of the cooking liquid with an equal amount of coconut milk, until it is soft. Use a fork to gently separate the grains, move the rice to a serving dish, and season with salt and pepper for a rich and buttery taste. Allow it to cool.
- While the rice cooks, take a separate bowl and add 1/4 cup of coconut milk. Grate the ginger and garlic finely into this bowl. Add the zest from one lime, then squeeze the juice from both limes into the mixture. Stir in 1/4 cup of the peanuts, almond butter, sugar, and sambal, and add salt to taste.
- Once you’re ready to serve, combine the halved cherry tomatoes and 3/4 cup of the mixed herbs with the cooled rice in the serving dish. Drizzle the coconut dressing over the mixture, toss everything together to ensure even coating, season with pepper, and sprinkle the remaining 1/4 cup of crushed peanuts and herbs on top. For optimal flavor, serve this dish at room temperature on the same day it is prepared.
