- 1/2 cup melted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F.
- Prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, mash your ripe bananas thoroughly.
- Add in the melted butter and mix well.
- Incorporate the granulated sugar, stirring until the mixture is smooth.
- Crack in the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract for added flavor.
- In a separate bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the banana mixture, folding gently until just combined.
- If using nuts, fold them into the batter at this stage.
- Pour the batter into the prepared loaf pan, using a spatula to spread it evenly.
- Tap the pan gently on the counter to remove any air bubbles.
- Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Notes
For best results, use very ripe bananas and ensure not to overmix the batter to maintain a fluffy texture.
