Ingredients
- 450g frozen peas
- 15ml vegetable oil
- 1 onion, finely chopped
- 5ml garlic puree
- 450g beef bacon, chopped
- 480ml hot water
- 2 vegetable stock cubes
Instructions
- Warm up a large pot with a splash of vegetable oil.
- Add the chopped onion and garlic puree to the pot. Sauté until the onion becomes soft and see-through, around 5 minutes.
- Toss in the frozen peas and continue to stir-fry for an additional 2-3 minutes.
- Mix the vegetable stock cubes with the hot water until dissolved, then pour into the pot. Let it come to a boil, then lower the heat and let it gently cook for 10-15 minutes.
- Blend the soup until smooth using a stick blender, or carefully transfer it in portions to a blender and puree until smooth.
- In a separate pan, cook the chopped beef bacon with a little oil for 5 minutes until it is done.
- Gently reheat the soup until it is thoroughly warmed.
- Serve the soup into bowls or a fun cauldron mug, garnish with the bacon pieces, and savor the flavors!
