Ingredients

  • – 2 1/2 cups (300g) all-purpose flour
  • – 1/2 teaspoon (3 ml) baking powder
  • – 1/4 teaspoon (1 ml) salt
  • – 3/4 cup (180g) unsalted butter, softened to room temperature
  • – 1 cup (240 ml) powdered sugar
  • – 1 large egg, at room temperature
  • – 1 teaspoon (5 ml) pure vanilla extract
  • – Green food coloring, optional
  • – 20 blanched almonds
  • – 2-3 tablespoons (38 ml) seedless raspberry jam


Instructions

  1. Set your oven to 350°F (180°C) or 160°C for a fan-assisted oven, and prepare two baking trays with parchment paper or silicone mats.
  2. In a small bowl, combine the flour, baking powder, and salt by whisking them together, then set aside.
  3. In a different bowl, blend the softened butter with powdered sugar until it becomes smooth.
  4. Incorporate the egg and vanilla extract, mixing thoroughly. Add some green food coloring if desired, and mix until evenly distributed.
  5. Gradually integrate the flour mixture into the butter mixture in 2-3 parts, ensuring to mix well after each addition.
  6. Divide the dough into 20 portions using a small cookie scoop, then roll each portion between your hands to form elongated shapes resembling fingers, placing them on the prepared trays with a 2-inch gap between each.
  7. Embed an almond into the end of each cookie with the pointed side facing outwards, then use a butter knife to carve lines that mimic knuckles, pinching the dough around the almond and knuckle lines for a finger-like appearance.
  8. Place the cookies in the preheated oven, baking them for 8-10 minutes until they are puffed and slightly golden on the bottom.
  9. Microwave the jam for 10-15 seconds and stir to make it easier for dipping.
  10. After letting the cookies cool for 2 minutes, gently remove the almonds, dip them in the jam, and reinsert them into their original positions on the cookies.
  11. Move the cookies to a wire rack to cool completely.
