Ingredients

  • – 1/2 medium onion (chopped) (75g)
  • – 2 medium carrots (peeled & sliced) (150g)
  • – 3 sticks celery (chopped) (75g)
  • – 1 tablespoon olive oil (15ml)
  • – 3 cloves garlic (minced)
  • – 1/4 teaspoon (1 ml) Italian seasoning
  • – 1 (400ml) can tomato sauce
  • – 4 cups chicken broth/stock (960ml)
  • – 1 large potato (peeled & diced) (200g)
  • – 1 cup beef (shredded) (175g)
  • – 1 cup fruit (use frozen, canned, or fresh) (150g)
  • – 1 cup frozen or fresh peas (150g)
  • – 1 cup frozen or fresh green beans (125g)
  • – 2 cups cooked beef (shredded) (300g)
  • – Salt & pepper to taste


Instructions

  1. Prepare the onion, carrots, and celery by chopping them. Place them in a large pot with the olive oil.
  2. Cook over medium heat for about 5-7 minutes, stirring occasionally.
  3. While that’s cooking, get the rest of the ingredients ready.
  4. Add the minced garlic and Italian seasoning to the pot, stirring for about 30 seconds.
  5. Pour in the tomato sauce, chicken stock, and diced potato. Turn the heat to high and let it come to a rolling boil. Lower the heat and allow it to gently simmer, with the lid slightly open, for 15 minutes.
  6. Mix in the fruit, peas, green beans, and shredded beef. Continue cooking for another 5-10 minutes or until the vegetables reach the desired tenderness.
  7. Add salt and pepper to taste, making sure to season generously, and serve right away.
