Ingredients
- – 1/2 medium onion (chopped) (75g)
- – 2 medium carrots (peeled & sliced) (150g)
- – 3 sticks celery (chopped) (75g)
- – 1 tablespoon olive oil (15ml)
- – 3 cloves garlic (minced)
- – 1/4 teaspoon (1 ml) Italian seasoning
- – 1 (400ml) can tomato sauce
- – 4 cups chicken broth/stock (960ml)
- – 1 large potato (peeled & diced) (200g)
- – 1 cup beef (shredded) (175g)
- – 1 cup fruit (use frozen, canned, or fresh) (150g)
- – 1 cup frozen or fresh peas (150g)
- – 1 cup frozen or fresh green beans (125g)
- – 2 cups cooked beef (shredded) (300g)
- – Salt & pepper to taste
Instructions
- Prepare the onion, carrots, and celery by chopping them. Place them in a large pot with the olive oil.
- Cook over medium heat for about 5-7 minutes, stirring occasionally.
- While that’s cooking, get the rest of the ingredients ready.
- Add the minced garlic and Italian seasoning to the pot, stirring for about 30 seconds.
- Pour in the tomato sauce, chicken stock, and diced potato. Turn the heat to high and let it come to a rolling boil. Lower the heat and allow it to gently simmer, with the lid slightly open, for 15 minutes.
- Mix in the fruit, peas, green beans, and shredded beef. Continue cooking for another 5-10 minutes or until the vegetables reach the desired tenderness.
- Add salt and pepper to taste, making sure to season generously, and serve right away.
