Description

Learn how to make a delicious and hearty White Chicken Chili Soup that will warm you up from the inside out. Perfect for cozy nights in!


Ingredients

  • 1 small yellow onion, diced
  • 1 tbsp (15 ml) olive oil
  • 2 cloves garlic, finely minced
  • 2 (400 g) cans low-sodium chicken broth
  • 1 (200 g) can diced green chilies
  • 1 1/2 tsp (8 ml) cumin
  • 1/2 tsp (3 ml) paprika
  • 1/2 tsp (3 ml) dried oregano
  • 1/2 tsp (3 ml) ground coriander
  • 1/4 tsp (1 ml) cayenne pepper
  • salt and freshly ground black pepper, to taste
  • 1 (225 g) pkg cream cheese, cut into small cubes
  • 1 1/4 cups (175 g) frozen or fresh corn
  • 2 (425 g) cans white kidney beans (cannellini beans)
  • 2 1/2 cups (600 ml) shredded cooked beef
  • 1 tbsp (15 ml) fresh lime juice
  • 2 tbsp (30 ml) chopped fresh cilantro, plus more for serving
  • Tortilla chips or strips, sliced cheese, sliced avocado for serving (optional)


Instructions

  1. Warm olive oil in a big pot over medium-high heat. Add diced onion and cook for 4 minutes. Introduce minced garlic and cook for another 30 seconds.
  2. Pour in chicken broth, diced green chilies, cumin, paprika, oregano, coriander, and cayenne pepper. Season with salt and freshly ground black pepper to your liking. Heat the mixture until it starts to boil, then lower the heat to medium-low and let it simmer for 15 minutes.
  3. Rinse and drain the white kidney beans using a fine mesh strainer or colander, then set aside 1 cup of whole beans. Put another 1 cup of beans into a blender with 1/4 cup of the soup broth and blend until almost smooth.
  4. Add cream cheese cubes into the soup along with frozen or fresh corn, whole beans, and the blended bean mixture. Stir thoroughly and let it simmer for an additional 5 to 10 minutes.
  5. Incorporate the shredded cooked beef, fresh lime juice, and chopped cilantro into the soup. Serve the soup topped with slices of cheese, extra cilantro, avocado slices, and tortilla chips if desired.

Notes

  • For a vegetarian option, skip the shredded cooked beef and use vegetable broth instead of chicken broth for a meat-free alternative.
