Description

A comforting white bean soup made with simple ingredients that create rich flavors to warm the heart.


Ingredients

  • 1 can (15 oz) of white beans (cannellini or great northern)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the white beans, vegetable broth, thyme, bay leaf, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Remove the bay leaf, and use an immersion blender to blend the soup to your desired consistency.
