A comforting white bean soup made with simple ingredients that create rich flavors to warm the heart.
Ingredients
- 1 can (15 oz) of white beans (cannellini or great northern)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the white beans, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
- Remove the bay leaf, and use an immersion blender to blend the soup to your desired consistency.
- Serve hot, garnished with fresh herbs.
