- 25 teaspoon (1 ml) salt
- 8 cups (1920 ml) low-sodium vegetable broth (1.9 liters)
- 1 medium head green cabbage, halved and sliced
- 1 large tomato, chopped
- 2 teaspoons (10 ml) white grape juice vinegar
Instructions
- Warm the oil in a large saucepan over a medium flame. Introduce the onion, carrots, and celery. Stir occasionally until the vegetables start to become tender, about 6 to 8 minutes.
- Incorporate the bell pepper, garlic, Italian seasoning, ground pepper, and salt, and continue stirring for an additional 2 minutes.
- Pour in the broth, then add the cabbage and tomato. Turn the heat up to medium-high and bring the mixture to a rolling boil.
- Lower the heat to keep a gentle simmer, partially cover the pot, and let it cook until all the vegetables reach a tender consistency, approximately 15 to 20 minutes longer.
