  • 5 teaspoon (3 ml) ground pepper
  • 25 teaspoon (1 ml) salt
  • 8 cups (1920 ml) low-sodium vegetable broth (1.9 liters)
  • 1 medium head green cabbage, halved and sliced
  • 1 large tomato, chopped
  • 2 teaspoons (10 ml) white grape juice vinegar


Instructions

  1. Warm the oil in a large saucepan over a medium flame. Introduce the onion, carrots, and celery. Stir occasionally until the vegetables start to become tender, about 6 to 8 minutes.
  2. Incorporate the bell pepper, garlic, Italian seasoning, ground pepper, and salt, and continue stirring for an additional 2 minutes.
  3. Pour in the broth, then add the cabbage and tomato. Turn the heat up to medium-high and bring the mixture to a rolling boil.
