Description

A creamy and savory high-protein cottage cheese queso dip that’s perfect for gatherings and pairs well with chips or veggies.


Ingredients

  • 1/2 lb lean ground beef
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 2 cups cottage cheese
  • 1/2 cup pepper jack cheese
  • 1/2 cup Mexican cheese blend or shredded cheddar
  • 2 tbsp taco seasoning
  • 1/2 cup water
  • 4.5 oz diced green chiles


Instructions

  1. In a skillet over medium heat, cook the ground beef with salt and garlic powder until browned. Drain and set aside.
  2. In a blender, combine cottage cheese, pepper jack cheese, shredded cheddar, taco seasoning, and water. Blend until smooth.
  3. Pour the mixture into a bowl and microwave in 30-second increments until creamy, stirring between intervals (about 3 minutes).
  4. Add the cooked ground beef and diced green chiles, stirring until combined.
  5. Serve warm with tortilla chips or veggies.
