A creamy and savory high-protein cottage cheese queso dip that’s perfect for gatherings and pairs well with chips or veggies.
Ingredients
- 1/2 lb lean ground beef
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 2 cups cottage cheese
- 1/2 cup pepper jack cheese
- 1/2 cup Mexican cheese blend or shredded cheddar
- 2 tbsp taco seasoning
- 1/2 cup water
- 4.5 oz diced green chiles
Instructions
- In a skillet over medium heat, cook the ground beef with salt and garlic powder until browned. Drain and set aside.
- In a blender, combine cottage cheese, pepper jack cheese, shredded cheddar, taco seasoning, and water. Blend until smooth.
- Pour the mixture into a bowl and microwave in 30-second increments until creamy, stirring between intervals (about 3 minutes).
- Add the cooked ground beef and diced green chiles, stirring until combined.
- Serve warm with tortilla chips or veggies.
