A comforting and rich Italian sausage soup, enhanced with heavy cream and Parmesan, perfect for cozy gatherings.
Ingredients
- 1 lb Italian sausage (spicy or mild)
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach or kale
- 1 tbsp Italian seasoning
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions and cook until translucent, about 5 minutes.
- Stir in minced garlic for another minute.
- Incorporate diced carrots and celery; cook for another 5 minutes.
- Crumble in the Italian sausage and brown for about 7 minutes.
- Add chicken broth along with sausage drippings.
- Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes.
- Slowly pour in heavy cream while stirring gently.
- Add spinach or kale during the last few minutes until wilted.
- Remove from heat and stir in freshly grated Parmesan until melted. Adjust seasoning with salt or pepper if desired.
Notes
For added depth of flavor, use homemade chicken broth. Garnish with extra Parmesan or a drizzle of olive oil before serving.
