Ingredients

  • – 8 oz (225g) noodles e.g. linguine or rice noodles
  • – 1 tbsp (15ml) vegetable oil
  • – 1/2 heaped tbsp fresh ginger grated
  • – 3-4 garlic cloves minced
  • – 7 oz (200g) fresh mushrooms chopped or 25g dried (rehydrated in water)
  • – 1 large carrot sliced
  • – 1 red bell pepper sliced
  • – 1 medium zucchini sliced
  • – 3/4 tsp (4 ml) onion powder
  • – 1/2 tsp (3 ml) smoked paprika
  • – Salt and black pepper to taste
  • – Green onion to garnish
  • – Sesame seeds to garnish
  • – ⅔ cup (160ml) vegetable broth or water
  • – 3-4 tbsp (53 ml) tamari or soy sauce (GF) or coconut aminos
  • – 2 tbsp (30 ml) rice vinegar
  • – 2 tbsp (30 ml) maple syrup or more to taste
  • – 1 tbsp (15 ml) cornstarch
  • – 1 pinch of red pepper flakes optional


Instructions

  1. Watch the video for a visual guide. Boil your choice of noodles in salted water until they are firm to the bite, ensuring they do not get too soft.
  2. At the same time, warm oil in a frying pan or wok and cook ginger and garlic on medium heat for approximately 2 minutes, making sure to stir often. Incorporate mushrooms, carrot, red bell pepper, zucchini, and the seasonings, then cook for about 5 minutes or until the vegetables have softened, stirring regularly. You can add a bit of water or vegetable broth to prevent burning.
  3. For the sauce, combine all sauce ingredients (vegetable broth, tamari, rice vinegar, maple syrup, cornstarch, and red pepper flakes) in a medium-sized bowl and mix with a whisk. Alternatively, place the sauce ingredients in a mason jar, secure the lid, and shake well.
  4. Transfer the sauce into the pan and allow the mixture to simmer. Let it cook gently for about 1 minute.
  5. Introduce the drained noodles to the pan and mix everything together. Cook for an additional 1-2 minutes, sampling the dish and adjusting the flavor by adding more salt, pepper, tamari, or sweetener as necessary. For a creamier texture, consider adding a few spoonfuls of peanut butter.
  6. Top with chopped green onions and sesame seeds, serve immediately, and enjoy! Keep any leftovers in a covered container in the refrigerator for up to 3 days.
