Ingredients
- – 3 tbsp (45 ml) olive or avocado oil
- – 1 medium yellow onion, diced (about 1 cup or 200g)
- – 2 carrots, cut into coins (1 cup or 150g)
- – 2 celery ribs, diced (1 cup or 140g)
- – 1 tbsp (15 ml) minced garlic
- – 1 cup (130g) small-diced sweet potatoes, cut into 1/2″ (1.5cm) cubes
- – 1 cup (160g) small-diced gold or russet potatoes, cut into 1/2″ (1.5cm) cubes
- – 1 1/2 tbsp (23 ml) tomato paste
- – 1 1/2 tsp (8 ml) dried basil
- – 1 1/4 tsp (6 ml) table salt, plus more to taste
- – 1/4 tsp (1 ml) ground black pepper, plus more to taste
- – 1 can (14.5 oz or 411g) fire roasted diced tomatoes, undrained
- – 1 1/2 cups (185g) fresh or frozen cut green beans
- – 1 1/4 cups (175g) fresh or frozen sweet corn
- – 1/2 cup (80g) fresh or frozen peas
- – 6 cups (1.5L) vegetable broth
- – 2 bay leaves
- – 1 thyme sprig or 1/2 tsp (3 ml) dried thyme
Instructions
- Pour the oil into a large pot and warm it over medium heat until it glistens.
- Introduce the diced onion, carrot slices, and chopped celery to the pot, cooking until they become tender, approximately 5 minutes.
- Incorporate the minced garlic, stirring continuously, and cook until its aroma is released, about 30 seconds.
- Add in the cubes of sweet and gold or russet potatoes, and cook for an additional 3-5 minutes, stirring from time to time.
- Mix in the tomato paste, dried basil, salt, and pepper, stirring until the tomato paste darkens in color, roughly 60 seconds.
- Pour in the fire-roasted diced tomatoes, green beans, corn, and peas, followed by the vegetable broth, then add the bay leaves and thyme. Stir thoroughly and bring the mixture to a gentle simmer.
- Let the soup gently simmer uncovered for 30 minutes, or until the potatoes and green beans are easily pierced with a fork, allowing the flavors to fully develop.
- Taste the soup and adjust the seasoning with more salt and pepper if needed, then serve.
