Ingredients

- 2 carrots, finely chopped
- 6 small white potatoes, finely chopped
- 1 16-ounce (454 g) bag green lentils
- 1 15.5-ounce (439 g) can diced fire-roasted tomatoes
- 8 cups (1.9 L) vegetable broth
- 1-2 cups (360 ml) finely chopped fresh spinach
- Salt and pepper to taste
Instructions
- Place everything except the spinach into a large pot or Dutch oven. Let it simmer on low heat for two hours.
