Ingredients
- – 450g lean ground beef (1 lb)
- – 1 small onion, finely diced
- – 1 teaspoon kosher salt

- – 1 can (425g) Italian style stewed tomatoes (15 oz)
- – 2 cans (450g each) beef broth (15 oz each)
- – 1 can (425g) petite diced tomatoes, do not drain (15 oz)
- – 1 can (425g) mixed vegetables, drained (15 oz)
- – 1 teaspoon dried basil
- – 1 teaspoon dried parsley
- – 1 1/2 cups (375 ml) uncooked egg noodles
Instructions
- Cook the lean ground beef, chopped onion, kosher salt, and black pepper in a large pot over medium-high heat, breaking the beef into small pieces as it cooks. Once the beef is browned and no longer pink, remove the excess fat.
- Puree the Italian style stewed tomatoes in a blender, then combine them with the cooked beef in the pot. Add the beef broth, petite diced tomatoes, drained mixed vegetables, dried basil, and dried parsley to the mixture. Heat until it starts to boil.
- When the mixture reaches a boil, incorporate the uncooked egg noodles and place a lid on the pot. Reduce the heat to low and allow the soup to simmer for 12-15 minutes.
