Ingredients
- 1 yellow onion (150g)
- 2 cloves garlic (10g)
- 2 Tbsp vegetable oil (30ml)
- 1/2 lb. carrots (about 180g)
- 128 oz. canned diced tomatoes (3.8 L)
- 1 cup pearled barley (200g)
- 1/2 tsp (3 ml) dried basil
- 1/2 tsp (3 ml) dried oregano
- freshly cracked black pepper
- 6 cups vegetable broth* (1.4 L)
- 1 russet potato (about 340g)
- 1 cup frozen green beans (150g)
- 1/2 cup frozen corn (75g)
- 1/2 cup frozen peas (75g)
- 1 Tbsp lemon juice (15ml)
- 1 handful fresh parsley (optional garnish)
Instructions
- Chop the onion into small pieces and finely chop the garlic. Place the onion, garlic, and vegetable oil into a large pot and cook on medium heat for approximately 5 minutes until the onion becomes soft and see-through.
- As the onions cook, peel and chop the carrots. When the onions have softened, add the carrots to the pot along with the canned diced tomatoes (including the liquid), barley, basil, oregano, a pinch of freshly cracked pepper, and vegetable broth.
- Mix everything in the pot thoroughly, cover it with a lid, increase the heat to medium-high, and bring the liquid to a boil. Once boiling, reduce the heat to medium-low and let the soup gently cook, covered, for 30 minutes, stirring from time to time.
- While the soup is cooking, peel and cut the potato into cubes about 1/2 inch in size. After the soup has been simmering and the barley is nearly soft, add the cubed potatoes and continue cooking for another 10 minutes until the potatoes are soft.
- When the potatoes are tender, add the frozen green beans, corn, and peas. Stir the mixture to blend everything and allow it to heat through for about 5 minutes.
- Lastly, mix in the lemon juice thoroughly. Taste the soup and adjust the seasoning with salt or pepper as needed. Serve while hot, garnished with fresh chopped parsley if you like.
