Ingredients
- 1 cup lentils
- 2 cups mushrooms, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onions are translucent.
- Add carrots and celery, cooking for about 5 minutes.
- Stir in mushrooms and cook until softened.
- Add lentils, vegetable broth, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to simmer. Cook for 30-40 minutes or until lentils are tender.
- Adjust seasoning as needed and serve warm.
