Description

A hearty and comforting vegan lentil mushroom stew, perfect for cool evenings or casual gatherings, brimming with flavors and textures.


Ingredients

  • 1 cup lentils
  • 2 cups mushrooms, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onions are translucent.
  2. Add carrots and celery, cooking for about 5 minutes.
  3. Stir in mushrooms and cook until softened.
  4. Add lentils, vegetable broth, thyme, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to simmer. Cook for 30-40 minutes or until lentils are tender.
  6. Adjust seasoning as needed and serve warm.
