Description

A warm and comforting Vegan German Potato Soup made with simple ingredients for a heartwarming meal.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or other non-dairy milk)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Sauté the chopped onions and minced garlic in a large pot over medium heat until translucent.
  2. Add the diced potatoes, carrots, and celery, and sauté for a few more minutes.
  3. Pour in the vegetable broth and bring to a rolling boil.
  4. Reduce heat and simmer until vegetables are tender, about 15-20 minutes.
  5. Stir in the coconut milk and dried thyme.
  6. Blend the mixture with an immersion blender until smooth.
  7. Season with salt and pepper to taste and serve warm, garnished with fresh parsley.

Notes

For a chunkier texture, blend only half of the mixture and stir it back in. Add red pepper flakes for a spicy kick.
