A warm and comforting Vegan German Potato Soup made with simple ingredients for a heartwarming meal.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups vegetable broth
- 1 cup coconut milk (or other non-dairy milk)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté the chopped onions and minced garlic in a large pot over medium heat until translucent.
- Add the diced potatoes, carrots, and celery, and sauté for a few more minutes.
- Pour in the vegetable broth and bring to a rolling boil.
- Reduce heat and simmer until vegetables are tender, about 15-20 minutes.
- Stir in the coconut milk and dried thyme.
- Blend the mixture with an immersion blender until smooth.
- Season with salt and pepper to taste and serve warm, garnished with fresh parsley.
Notes
For a chunkier texture, blend only half of the mixture and stir it back in. Add red pepper flakes for a spicy kick.
