Description

Delicious vanilla cupcakes with a burst of fresh berries, perfect for summer gatherings.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 cup fresh berries (blueberries, raspberries, or strawberries)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a cupcake pan with cupcake liners.
  3. Cream together the softened butter and sugar until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. In a separate bowl, combine the all-purpose flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  8. Mix until just combined. Avoid overmixing.
  9. Fold in the fresh berries gently.
  10. Spoon the batter into each cupcake liner, filling them about two-thirds full.
