Ingredients
- 2 tablespoon (30 ml) s olive oil
- 8 ounce (227 g) s mini sweet peppers, sliced crosswise (about 10 peppers, mixed colors)
- 1 cup (240 ml) chopped yellow onion
- 1 pound (454 g) lean ground beef (90/10)
- 1 tablespoon (15 ml) minced garlic
- 5 teaspoon (8 ml) s Italian seasoning
- 1 (15 ounce (425 g)) can tomato sauce
- 25 cup (60 ml) water
- 3 tablespoon (45 ml) s hot cherry pepper hoagie spread (such as Cento)
- 75 teaspoon (4 ml) kosher salt
- 1 (8.8 ounce (249 g)) package microwavable white rice (such as Uncle Ben’s), crumbled
- 1 cup (240 ml) shredded Italian cheese blend
- 2 tablespoon (30 ml) s chopped fresh basil or flat-leaf parsley
Instructions
- Warm the olive oil in a large pan over medium-high heat.
- Introduce the sliced peppers and chopped onion, stirring occasionally, until they become soft, roughly 4 minutes.
- Add the ground beef, breaking it apart as it cooks, and continue until it’s lightly browned, about 5 minutes.
- Incorporate the minced garlic and Italian seasoning, stirring continuously until the aroma is released, approximately 1 minute.
- Mix in the tomato sauce, water, hoagie spread, and salt.
- Allow the mixture to reach a boil over medium-high heat.
- Blend in the crumbled rice, ensuring it is well-coated with the sauce.
- Cover the pan, reduce the heat to medium to keep a gentle simmer, and cook until the rice and vegetables are fully softened, which should take about 8 minutes, stirring once midway to avoid sticking.
- Remove the cover, take the skillet off the heat, and sprinkle the shredded cheese on top.
- Place the cover back on and let it sit until the cheese has melted, roughly 1 to 2 minutes.
- Serve the dish warm, garnished with either fresh basil or parsley.
Notes
- Consider using ground turkey or chicken in place of ground beef for a healthier twist.
- Mix in additional vegetables like zucchini or mushrooms for extra flavor and nutrients.
- Customize the dish by trying different cheese blends to suit your taste preferences.
