Ingredients

  • 2 tablespoon (30 ml) s olive oil
  • 8 ounce (227 g) s mini sweet peppers, sliced crosswise (about 10 peppers, mixed colors)
  • 1 cup (240 ml) chopped yellow onion
  • 1 pound (454 g) lean ground beef (90/10)
  • 1 tablespoon (15 ml) minced garlic
  • 5 teaspoon (8 ml) s Italian seasoning
  • 1 (15 ounce (425 g)) can tomato sauce
  • 25 cup (60 ml) water
  • 3 tablespoon (45 ml) s hot cherry pepper hoagie spread (such as Cento)
  • 75 teaspoon (4 ml) kosher salt
  • 1 (8.8 ounce (249 g)) package microwavable white rice (such as Uncle Ben’s), crumbled
  • 1 cup (240 ml) shredded Italian cheese blend
  • 2 tablespoon (30 ml) s chopped fresh basil or flat-leaf parsley

Instructions

  1. Warm the olive oil in a large pan over medium-high heat.
  2. Introduce the sliced peppers and chopped onion, stirring occasionally, until they become soft, roughly 4 minutes.
  3. Add the ground beef, breaking it apart as it cooks, and continue until it’s lightly browned, about 5 minutes.
  4. Incorporate the minced garlic and Italian seasoning, stirring continuously until the aroma is released, approximately 1 minute.
  5. Mix in the tomato sauce, water, hoagie spread, and salt.
  6. Allow the mixture to reach a boil over medium-high heat.
  7. Blend in the crumbled rice, ensuring it is well-coated with the sauce.
  8. Cover the pan, reduce the heat to medium to keep a gentle simmer, and cook until the rice and vegetables are fully softened, which should take about 8 minutes, stirring once midway to avoid sticking.
  9. Remove the cover, take the skillet off the heat, and sprinkle the shredded cheese on top.
  10. Place the cover back on and let it sit until the cheese has melted, roughly 1 to 2 minutes.
  11. Serve the dish warm, garnished with either fresh basil or parsley.

Notes

  • Consider using ground turkey or chicken in place of ground beef for a healthier twist.
  • Mix in additional vegetables like zucchini or mushrooms for extra flavor and nutrients.
  • Customize the dish by trying different cheese blends to suit your taste preferences.
