Description

A comforting and hearty Tuscan White Bean Soup featuring Italian sausage, fresh vegetables, and creamy Great Northern beans.


Ingredients

  • 1 pound mild Italian sausage
  • 1 large yellow onion (diced, about 1 ½ cups)
  • 3 ribs celery (diced)
  • 2 large carrots (sliced into rounds)
  • 2 teaspoons garlic (minced)
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground black pepper
  • 4 cups (32 ounces) chicken broth
  • 2 cans (15.5 ounces each) Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream
  • Parsley (chopped for garnish)


Instructions

  1. Heat a large Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up into smaller pieces until golden brown, about 10-15 minutes.
  2. Reduce heat to medium and stir in the diced onions, celery, and carrots. Sauté until onions are softened, about 3-5 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in tomato paste, Italian seasoning, crushed red pepper, and ground black pepper.
  5. Pour in chicken broth and add the rinsed Great Northern beans. Bring to a simmer and cook for 6-7 minutes until vegetables soften.
  6. Stir in heavy whipping cream and fresh baby spinach, cooking until spinach is wilted, about 5 minutes.
  7. Serve hot, garnished with chopped parsley.

Notes

Feel free to adjust seasonings to personal taste. Add more garlic or crushed red pepper for additional flavor.
