Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 large yellow onion, diced
- 1 tablespoon minced garlic (15 ml)
- 2 large carrots, peeled and sliced
- 1/3 cup diced sun-dried tomatoes (80 ml)
- 1 tablespoon tomato paste (15 ml)
- 4 cups low sodium chicken broth (946 ml)
- 1 can (15 oz) cannellini beans, drained and rinsed (425 g)
- 1/2 cup coconut cream (120 ml)
- 1 teaspoon dried thyme (5 ml)
- 1/2 teaspoon oregano
- 1/2 teaspoon Italian seasoning
- 1 – 1 1/2 teaspoons salt, start with 1 and add more as needed
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 3 cups shredded cooked beef
- 2 bay leaves
- 2 cups spinach (60 g)
Instructions
- In a large pot or dutch oven, pour in the olive oil and warm it over a medium flame.
- Add the diced onion and cook for a few minutes until it starts to soften.
- Incorporate the sliced carrots and continue to cook for a few more minutes, then mix in the minced garlic and cook for an additional minute.
- Introduce the sun-dried tomatoes and tomato paste, cooking them together briefly for 1-2 minutes.
- Pour in the grape juice and let it simmer until the liquid reduces significantly, enhancing the flavors.
- Add the chicken broth, beans, coconut cream, and your selection of herbs and spices, but hold off on adding the bay leaves.
- Combine all ingredients thoroughly, then remove about a cup of the mixture and blend it until smooth before returning it to the pot for a creamier texture. This step can be skipped if preferred.
- Now, add the shredded beef and the bay leaves, allowing the mixture to simmer for at least 15 minutes to meld the flavors.
- Remove the bay leaves, then stir in the spinach and let it soften. Adjust the seasoning to your liking. The soup will naturally thicken as it sits; if a thinner soup is desired, simply add more chicken broth.
- Top with garnishes like fresh parsley, red pepper flakes, or parmesan and enjoy your meal!
