- 1/4 cup diced celery (60 g)
- 1/3 cup all-purpose flour (40 g)
- 4 cups chicken broth (960 ml)
- 1/3 cup shredded carrots (40 g)
- 2 cups chopped leftover roasted chicken (300 g)
- 2 cups cooked wild rice (400 g)
- 1/4 cup chopped slivered almonds (30 g)
- 1/2 tsp (3 ml) salt, or to taste
- 1/2 tsp (3 ml) ground black pepper, or to taste
- 1/2 tsp (3 ml) lemon juice
- 3/4 cup whole milk (180 ml)
Instructions
- Collect all necessary components.
- In a soup pot, warm vegetable oil over medium heat. Add the onion and celery; sauté until they become translucent, roughly 5 minutes.
- Incorporate the flour, cooking until it achieves a light golden-brown hue, for about 3 to 5 minutes.
- Slowly pour in the chicken broth while whisking, ensuring there are no flour lumps.
- Add in the carrots and bring the mixture to a gentle boil. Stir continuously until the broth thickens and the carrots soften, approximately 2 minutes.
- Mix in the roasted chicken, wild rice, almonds, salt, and pepper; let it simmer until thoroughly heated, around 5 minutes.
- Add the lemon juice and whole milk; heat the soup until it’s nearly boiling. Serve right away.
Notes
- For a more flavorful broth, use homemade chicken broth instead of store-bought.
- Feel free to enhance the soup with extra vegetables like peas or corn.
- Adjust the seasoning to taste before serving; customize it to your liking.
