Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 2 medium yellow onions, diced
  • 3 medium carrots, peeled and cut into 1/4-inch rounds
  • 3 medium celery, cut into 1/4-inch slices
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) tomato paste
  • 6 cups (1440 ml) (1.42 liters) low-sodium chicken or turkey broth
  • 3 cups (720 ml) cooked, diced turkey meat
  • 2 bay leaves
  • 1 sprig fresh thyme
  • 1/4 cup (60 ml) coarsely chopped fresh parsley leaves


Instructions

  1. Warm the vegetable oil in a Dutch oven or a large pot over medium flame. Introduce the diced onions, carrot rounds, celery slices, and minced garlic, stirring every now and then, until the veggies become tender, approximately 5 minutes. Incorporate the tomato paste, mixing it with the vegetables, and let it cook for another minute.
  2. Pour in the broth, add the turkey pieces, bay leaves, and thyme, and blend everything together. Allow the mixture to reach a boil, then lower the heat to let it gently cook for 30 minutes. Give it another stir and serve the soup into bowls. Garnish with chopped parsley and present it hot.
