Ingredients

  • 1 1/2 lb. (680 g) thin spaghetti, broken in half
  • 4 tbsp. (60 ml) vegetable oil
  • 4 cloves garlic, minced
  • 1 lb. (450 g) white mushrooms, quartered
  • 1/2 tsp (3 ml). salt, plus more to taste
  • 1 c. (240 ml) apple juice
  • 1/3 c. (80 g) cornstarch
  • 4 c. (960 ml) beef (or chicken) broth, plus more for thinning
  • 1 (8-oz.) package cream cheese
  • 3 c. (360 g) cooked beef, shredded or diced
  • 1 c. finely chopped black olives
  • 1 1/2 c. (225 g) frozen green peas
  • 4 strips beef bacon, fried and cut into bits
  • 1 c. (120 g) grated cheddar cheese
  • 1 c. (80 g) grated mozzarella cheese
  • Ground black pepper, to taste
  • 1 c. (100 g) breadcrumbs


Instructions

  1. Boil the pasta until it’s slightly undercooked or firm to the bite, as per the package directions, since it will finish cooking in the oven. Drain, rinse, and keep it aside.
  2. In a large pot, warm the vegetable oil over medium-high heat. Add the minced garlic and sauté briefly. Toss in the mushrooms and salt, then continue cooking for a bit longer. Pour in the apple juice and let it simmer with the mushrooms until the liquid is reduced by half.
  3. Sprinkle in the cornstarch, then stir the mushrooms for another minute. Add the broth and stir, cooking for a few more minutes until it thickens.
  4. Lower the heat to medium-low. Break the cream cheese into chunks and add them to the pot. Stir until melted (don’t worry if small bits remain; they will eventually melt!). Add the cooked beef, black olives, peas, bacon bits, and cheeses. Mix everything together, seasoning with salt and pepper as needed.
  5. Combine the cooked spaghetti with the mixture. Add more broth if needed; the mixture should be slightly moist as it will lose moisture in the oven. It’s okay if it’s a bit soupy; you can add up to 2 more cups of broth if necessary.
  6. Transfer the mixture into a large baking dish and cover the top with breadcrumbs. Bake at 350°F until the dish is bubbly and the breadcrumbs are golden brown, about 20 minutes.

  • Try vegetable broth instead of beef or chicken for a vegetarian option.
