Ingredients
- 1 lb (454 g) 93% lean ground beef
- 1 clove garlic, minced
- 1/4 medium onion, minced
- 1 tbsp (15 ml) chopped fresh cilantro or parsley
- 1 tsp (5 ml) garlic powder
- 1 tsp (5 ml) cumin powder
- 1 tsp (5 ml) kosher salt
- 3 large sweet red bell peppers, washed
- 1 cup (240 ml) reduced sodium chicken broth, divided
- 1/4 cup (60 ml) tomato sauce
- 1 1/2 cup (360 ml) s cooked brown rice
- Vegetable oil spray
- 6 tbsp (90 ml) part skim shredded cheddar cheese*
Instructions
- Preheat your oven to 400°F.
- Use a vegetable oil spray to lightly coat a medium-sized nonstick frying pan and warm it over medium heat.
- Sauté the minced onion, garlic, and cilantro for around 2 minutes, then incorporate the ground beef, salt, garlic powder, and cumin, cooking the mixture for 4 to 5 minutes until the beef is fully browned.
- Stir in 1/4 cup of tomato sauce and 1/2 cup of chicken broth, ensuring everything is well mixed, and let it simmer gently on low heat for about 5 minutes.
- Blend the cooked brown rice with the beef mixture.
- Slice the red bell peppers in half lengthwise and remove the seeds. Fill each pepper half with 2/3 cup of the beef mixture and arrange them in a 9 x 13-inch baking dish. Sprinkle each half with 1 tablespoon of shredded cheddar cheese.
- Pour the rest of the chicken broth into the bottom of the dish. Seal the dish tightly with aluminum foil and place it in the oven to bake for roughly 45 minutes, or until the peppers are soft.
- Gently take off the foil and serve immediately.
