Ingredients
- 2 medium eggplants (firm and smooth-skinned)
- 2 cloves garlic (minced)
- 2 tablespoons harissa (adjust to taste)
- 3 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon coarse salt (adjust according to taste)
- 3 tablespoons olive oil (high-quality extra virgin)
- 1 loaf crusty bread (for dipping)
- Fresh herbs (such as parsley or cilantro)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the eggplants and pat dry.
- Slice the eggplants lengthwise and score the flesh.
- Drizzle olive oil over the eggplant halves and sprinkle with coarse salt.
- Place the eggplants cut side down on a lined baking sheet.
- Roast for about 30-35 minutes until tender.
- Allow the eggplants to cool slightly before scooping out the flesh into a bowl.
