Description

A vibrant and flavorful salad featuring roasted eggplant and a spicy harissa kick, perfect for gatherings and celebrations.


Ingredients

  • 2 medium eggplants (firm and smooth-skinned)
  • 2 cloves garlic (minced)
  • 2 tablespoons harissa (adjust to taste)
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon coarse salt (adjust according to taste)
  • 3 tablespoons olive oil (high-quality extra virgin)
  • 1 loaf crusty bread (for dipping)
  • Fresh herbs (such as parsley or cilantro)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the eggplants and pat dry.
  3. Slice the eggplants lengthwise and score the flesh.
  4. Drizzle olive oil over the eggplant halves and sprinkle with coarse salt.
  5. Place the eggplants cut side down on a lined baking sheet.
  6. Roast for about 30-35 minutes until tender.
  7. Allow the eggplants to cool slightly before scooping out the flesh into a bowl.
  8. Add minced garlic, harissa, lemon juice, and additional salt if needed to the eggplant flesh.
  9. Mix well until all ingredients are combined.
  10. Adjust harissa to taste for the desired heat level.
  11. Serve with crusty bread for dipping and sprinkle with fresh herbs.

Notes

For a smoky flavor, consider grilling the eggplants. Adjust lemon juice for tanginess and add cucumbers or bell peppers for crunch.
