Ingredients

  • – 1 tablespoon (15 ml) olive oil
  • – 2 cups (480 ml) fresh spinach leaves (trimmed and washed thoroughly)
  • – 4 large eggs
  • – 2/3 cup (160 ml) heavy cream (or milk, half and half, etc…)
  • – 1/3 cup (80 ml) crumbled feta cheese
  • – 1-2 plum tomatoes (diced)
  • – 2 cloves garlic (minced)
  • – salt and freshly ground black pepper to taste
  • – 1 cup (120 g) all-purpose flour
  • – 1/2 tsp (3 ml) salt
  • – 1/4 cup (60 ml) olive oil
  • – 1/4 cup (60 ml) ice cold water


Instructions

  1. To begin, prepare the crust by combining the flour and salt in a medium-sized bowl. Set this mixture aside. In another bowl, vigorously whisk together the oil and cold water until they thicken. Pour this into the flour mixture and blend with a fork. Press the resulting dough into a 9-10 inch pie dish, ensuring it’s spread thinly to achieve a crispy, flaky crust rather than a thick one.
  2. Set your oven to 350°F and get started on the quiche filling.
  3. Sprinkle the crumbled feta cheese evenly across the base of the crust.
  4. Heat the olive oil in a pan, then add the spinach leaves, cooking them until they wilt. Once wilted, layer the spinach over the cheese.
  5. In a separate container, whisk together the eggs, garlic, and heavy cream or milk, adding salt and pepper to taste. Pour this mixture over the cheese and spinach.
  6. Scatter the diced tomatoes over the mixture or arrange them as you prefer. Add an extra dash of freshly ground black pepper if you wish, and consider sprinkling more feta cheese on top for additional flavor.
  7. Pour the quiche filling into the crust and bake in the oven at 350°F for about 35-45 minutes until it is completely cooked and firm.
