Ingredients
- 350 g (12.3 oz) Sweet Cherry Tomatoes
- 10-15 Cloves Garlic
- 120 ml (1/2 cup) Vegetable Oil
- 60 ml (1/4 cup) Parsley / Cilantro Chopped Tightly Packed
- Salt to Taste
- 1+1/2 tsp (3 ml) Freshly Cracked Black Pepper
- 1 tsp (5 ml) Dried Oregano
- 1 tsp (5 ml) Red Chili Flakes
- 8 oz (227 g) Burrata
Instructions
- Set your oven to 375°F to warm up.
- Place the cherry tomatoes, garlic, and vegetable oil along with the tightly packed chopped parsley or cilantro into a roasting pan.
- Season with salt and freshly cracked black pepper and ensure everything is well mixed so the tomatoes and garlic are evenly covered.
- Place the pan in the oven and let it cook for 30 minutes, then remove it.
- Position the Burrata cheese in the center of the tray. Sprinkle the confit and Burrata with dried oregano, red chili flakes, and some more of the fresh parsley or cilantro.
- Serve it with slices of baguette that have been toasted. I like to crisp the baguette in the oven at 400°F for 5 to 7 minutes.
