Ingredients

  • 350 g (12.3 oz) Sweet Cherry Tomatoes
  • 10-15 Cloves Garlic
  • 120 ml (1/2 cup) Vegetable Oil
  • 60 ml (1/4 cup) Parsley / Cilantro Chopped Tightly Packed
  • Salt to Taste
  • 1+1/2 tsp (3 ml) Freshly Cracked Black Pepper
  • 1 tsp (5 ml) Dried Oregano
  • 1 tsp (5 ml) Red Chili Flakes
  • 8 oz (227 g) Burrata


Instructions

  1. Set your oven to 375°F to warm up.
  2. Place the cherry tomatoes, garlic, and vegetable oil along with the tightly packed chopped parsley or cilantro into a roasting pan.
  3. Season with salt and freshly cracked black pepper and ensure everything is well mixed so the tomatoes and garlic are evenly covered.
  4. Place the pan in the oven and let it cook for 30 minutes, then remove it.
  5. Position the Burrata cheese in the center of the tray. Sprinkle the confit and Burrata with dried oregano, red chili flakes, and some more of the fresh parsley or cilantro.
  6. Serve it with slices of baguette that have been toasted. I like to crisp the baguette in the oven at 400°F for 5 to 7 minutes.
