A delicious and refreshing sandwich featuring ripe tomatoes, creamy avocado, and a zesty Greek yogurt dressing.
Ingredients
- 1 (5.3-ounce / 150 gram) container plain Greek yogurt
- 4 large basil leaves, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon sriracha sauce
- 3 large tomatoes, sliced
- 2 avocados, pitted and sliced
- 8 slices whole wheat bread
- Kosher salt
- Freshly ground pepper
Instructions
- Prepare the dressing: In a bowl, mix the Greek yogurt with the finely chopped basil, minced garlic, sriracha, and a pinch of kosher salt and pepper. Stir until smooth and well blended.
- Prepare the bread: Lay out the slices of whole wheat bread on a clean surface or plate.
- Spread the dressing: Generously spread the Greek yogurt dressing on one side of each slice of bread.
- Layer the ingredients: Place sliced tomatoes on half of the bread slices, seasoning lightly with salt and pepper.
- Add avocado: Layer the sliced avocados on top of the tomatoes.
- Top it off: Place the remaining slices of bread, dressing side down, on top of the assembled ingredients.
- Serve and enjoy: Cut the sandwiches in half or quarters for easy handling and serve immediately.

For best flavor, use the freshest ingredients available and let the sandwich sit for a minute after assembling.
