Description

A lighter twist on traditional tiramisu, this tiramisu chia pudding combines Greek yogurt and chia seeds for a creamy, coffee-flavored dessert.


Ingredients

  • 2 cups plain Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup milk of your choice
  • ½ cup chia seeds
  • 1.5 tablespoons instant espresso powder
  • A pinch of salt
  • 1 cup Greek yogurt (for topping)
  • 2 teaspoons maple syrup (for topping)
  • 1 teaspoon vanilla extract (for topping)
  • Unsweetened cocoa powder (for dusting)


Instructions

  1. Measure out the pudding base ingredients: Greek yogurt, maple syrup, vanilla extract, milk, chia seeds, espresso powder, and a pinch of salt.
  2. Place all measured ingredients into a high-speed blender.
  3. Blend on medium-high for about 60 seconds, scraping the sides as needed.
  4. Divide the blended pudding into four jars, smoothing the tops with a spoon.
  5. For the topping, combine 1 cup of Greek yogurt, 2 teaspoons of maple syrup, and 1 teaspoon of vanilla extract in a bowl, whisking until smooth.
  6. Layer the topping evenly over each pudding jar.
  7. Dust cocoa powder over the top of each jar.
  8. Cover the jars and refrigerate for at least 2 hours, ideally overnight.

Notes

Allow the pudding to chill for at least 2 hours for the best texture. Experiment with different toppings for added flavor.
