Description

A delightful and nostalgic recipe for thick and chewy oatmeal cookie bars, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until smooth and well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, mixing until combined.
  5. Stir in the rolled oats and chocolate chips until evenly distributed through the dough.
  6. Spread the mixture evenly in the prepared baking pan.
  7. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  8. Remove from the oven and allow to cool in the pan before cutting into bars.

Notes

For thicker bars, use a smaller baking pan. Experiment with different types of chocolate chips for varied flavors.
