Ingredients

  • 1 and ½ pounds (680 g) tomatoes, diced
  • 1 small onion, finely chopped
  • 5 scallions (green and white parts), finely sliced
  • ½ cup (120 ml) finely chopped fresh herbs
  • ¼ cup (60 ml) parsley
  • ¼ cup (60 ml) basil or dill
  • 2 tablespoons (30 ml) finely chopped fresh mint
  • 2 teaspoons (10 ml) dried crushed oregano
  • Salt and freshly ground pepper, to taste
  • 1 and 1/2 – 2 cups (180-240 g) all-purpose flour
  • 1 and 1/2 teaspoons (7.5 ml) baking powder
  • Optional: ½ pound (225 g) feta cheese, crumbled
  • Vegetable oil, for frying
  • Yogurt sauce for dipping


Instructions

  1. In a large mixing bowl, mix together the chopped tomatoes, crumbled feta, onions, scallions, and herbs. Lightly season with salt and pepper.
  2. In a separate bowl, blend the flour, a teaspoon of salt (or adjust to taste), and baking powder, whisking until well combined.
  3. Incorporate the flour mixture into the tomato blend, stirring thoroughly with a spatula until everything is evenly mixed.
  4. Taste the mixture and adjust salt and pepper as needed.
  5. This mixture can be chilled in the refrigerator for a few hours to allow the flavors to develop, but it can also be used right away. For optimal taste, let it rest for at least an hour.
  6. Warm the oil in a frying pan on medium-high heat.
  7. Gently spoon a tablespoon of the batter into the hot oil, frying for at least 3 minutes before turning to help maintain the shape of the fritter.
  8. Continue cooking until the fritters achieve a golden brown color on all sides, about 6-7 minutes in total.
  9. Transfer the cooked fritters onto a plate lined with paper towels to soak up any excess oil.
  10. Serve right away with yogurt sauce for dipping.
