Description

A vibrant and crunchy salad featuring cooked chicken, fresh vegetables, and a creamy peanut dressing that delights the senses.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 cups mixed salad greens
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, sliced
  • 1/2 cup cucumber, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup peanuts, roasted
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the salad greens, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss to combine.
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, salt, and pepper until smooth.
  3. Add the shredded chicken to the salad and drizzle with the peanut dressing. Toss until everything is well coated.
  4. Top with roasted peanuts before serving.
  5. Serve immediately or store in the fridge for meal prep.

Notes

Allow the salad to marinate for a few minutes after tossing with the dressing to enhance flavor. Use leftover cooked chicken for convenience.
