A vibrant and crunchy salad featuring cooked chicken, fresh vegetables, and a creamy peanut dressing that delights the senses.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 4 cups mixed salad greens
- 1 cup red cabbage, shredded
- 1 cup carrots, julienned
- 1 red bell pepper, sliced
- 1/2 cup cucumber, sliced
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/2 cup peanuts, roasted
- 1/3 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the salad greens, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss to combine.
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, salt, and pepper until smooth.
- Add the shredded chicken to the salad and drizzle with the peanut dressing. Toss until everything is well coated.
- Top with roasted peanuts before serving.
- Serve immediately or store in the fridge for meal prep.
Notes
Allow the salad to marinate for a few minutes after tossing with the dressing to enhance flavor. Use leftover cooked chicken for convenience.
