Description

A comforting chicken dish smothered in mushrooms, onions, and melted cheese, perfect for family gatherings.


Ingredients

  • 4 boneless (skinless chicken breasts (about 68 oz each))
  • 2 tablespoons olive oil (or butter)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sliced mushrooms
  • 1 small onion (thinly sliced)
  • 1 cup shredded mozzarella cheese (or Monterey Jack)
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley (chopped (for garnish))


Instructions

  1. Pound chicken breasts to an even thickness of about ½ inch. Pat dry with paper towels.
  2. Mix paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub this seasoning evenly over both sides of the chicken.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes on each side until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set it aside on a plate to keep warm.
  4. Add the remaining oil, sliced mushrooms, and onions to the same skillet. Cook for 5–7 minutes until softened and lightly caramelized.
  5. Return the chicken to the skillet. Top each piece with the sautéed mushrooms and onions. Sprinkle mozzarella and cheddar cheese over the top. Cover the skillet with a lid and reduce the heat to low. Cook for 2–3 minutes until the cheese melts beautifully.
  6. Garnish your Texas Roadhouse Smothered Chicken with fresh parsley. Serve hot with mashed potatoes, rice, or steamed vegetables.

Notes

For added flavor, consider adding different spices to the rub. A touch of cayenne can introduce a mild heat, while Italian herbs may create a fragrant twist.
