Ingredients
- 4 cups frozen tater tots
- 6 large eggs
- ½ cup milk
- 1 tablespoon butter or oil
- 1 cup shredded cheddar cheese
- ½ cup cooked breakfast sausage (crumbled) or cooked bacon (chopped)
- ½ cup diced bell peppers
- ¼ cup diced red onion
- 2 green onions (sliced)
- Salt and pepper to taste
- Optional toppings: Salsa, hot sauce, sour cream, avocado
Instructions
- Preheat your oven to 425°F (220°C).
- Spread the frozen tater tots in a single layer on a sheet pan and bake for 20–25 minutes until golden and crispy.
- While the tots are baking, whisk together the 6 large eggs with ½ cup milk, and season with salt and pepper.
- Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat. Scramble the eggs until fully cooked but soft. Set aside.
- Using the same skillet, add the diced bell peppers and red onion. Sauté for 3–4 minutes until the vegetables are tender yet vibrant.
- Divide the crispy tater tots evenly between serving bowls. Top each bowl with scrambled eggs, cooked sausage or bacon, sautéed vegetables, shredded cheddar cheese, and sliced green onions.
- Add any desired toppings such as salsa, sour cream, hot sauce, or avocado. Serve the breakfast bowls warm and enjoy.
