Description

Delicious roll ups with a refreshing cucumber base filled with creamy chicken salad.


Ingredients

  • 2 large cucumbers
  • 1 cup cooked chicken, shredded
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish


Instructions

  1. Slice the cucumbers lengthwise and scoop out the seeds to create a hollow space.
  2. In a bowl, mix shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, celery, onion, salt, and pepper until well combined.
  3. Spoon the chicken salad mixture into the hollowed cucumbers.
  4. Roll them up gently and secure with a toothpick if necessary.
