Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups beef broth
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef and onion over medium heat until the meat is no longer pink. Drain any excess fat.
- Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, beef broth, and taco seasoning to the pot.
- Stir well to combine all ingredients, ensuring they mix evenly.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes.
- Season with salt and pepper to taste. Adjust according to your preference.
- Serve hot, topped with your choice of optional ingredients, such as sour cream, shredded cheese, jalapeños, or tortilla chips.
