Description

A vibrant and hearty Taco Rice Bowl made with seasoned ground beef or chicken, black beans, corn, diced tomatoes, and topped with cheese and avocado.


Ingredients

  • 1 cup cooked rice
  • 1 pound ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. In a large skillet, cook the ground beef or chicken over medium heat until browned.
  2. Add the taco seasoning and a little water, stir well, and let it cook for a few minutes.
  3. In a bowl, layer the cooked rice, the meat mixture, black beans, corn, diced tomatoes, and top with cheese.
  4. Add diced avocado and sour cream on top.
  5. Garnish with fresh cilantro and serve.
