A vibrant and hearty Taco Rice Bowl made with seasoned ground beef or chicken, black beans, corn, diced tomatoes, and topped with cheese and avocado.
Ingredients
- 1 cup cooked rice
- 1 pound ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 avocado, diced
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a large skillet, cook the ground beef or chicken over medium heat until browned.
- Add the taco seasoning and a little water, stir well, and let it cook for a few minutes.
- In a bowl, layer the cooked rice, the meat mixture, black beans, corn, diced tomatoes, and top with cheese.
- Add diced avocado and sour cream on top.
- Garnish with fresh cilantro and serve.
