A delicious and comforting sandwich featuring sautéed mushrooms and melted Swiss cheese, perfect for a quick lunch or easy dinner.
Ingredients
- 2 tbsp butter (plus extra for bread)
- 1 tbsp olive oil
- 1 shallot (finely chopped)
- 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
- 1 tsp thyme (fresh or dried)
- 1 tbsp balsamic vinegar (optional for added flavor)
- Salt and pepper to taste
- 4 slices Swiss cheese (or Gruyère for a richer taste)
- 8 slices bread (Rye, Sourdough, or Artisan)
Instructions
- Heat a dry skillet over medium heat. Add sliced mushrooms and cook for 5–7 minutes until moisture evaporates.
- Add butter, olive oil, and shallots to the skillet. Cook for an additional 5 minutes until mushrooms are golden.
- Stir in thyme, balsamic vinegar (if using), salt, and pepper. Set the mixture aside.
- Butter one side of each slice of bread. On the unbuttered side, layer one slice of Swiss cheese, followed by the mushroom mixture, and top with another slice of cheese.
- Close the sandwich with another slice of bread, ensuring the buttered side is facing up.
- In a skillet or panini press, cook each sandwich for 2–3 minutes per side until golden brown and the cheese fully melts.

Use fresh ingredients for the best flavor. Feel free to experiment with different cheeses or add additional fillings like spinach or roasted peppers.
