Description

A wholesome and delightful Sweet Potato Taco Bowl featuring roasted sweet potatoes, seasoned ground beef, and vibrant toppings that transform an ordinary night into a memorable feast.


Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • ½ pound ground beef (or turkey/lentils)
  • 1 tablespoon taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tablespoons sour cream (or a dairy-free alternative)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper. Spread them in a single layer on a sheet pan.
  3. Roast for 15 minutes, flip, and roast for another 10-15 minutes until golden and tender.
  4. In a skillet over medium heat, brown your ground beef. Once cooked, add taco seasoning and 2 tablespoons of water, then simmer for 2-3 minutes until the mixture thickens.
  5. Divide the roasted sweet potatoes into bowls. Top each bowl with seasoned beef, pico de gallo, guacamole, and sour cream.
  6. Garnish with fresh cilantro or lime wedges for extra flavor.
