Description

Delightful sweet potato bites topped with gooey marshmallows and crunchy pecans, perfect for gatherings.


Ingredients

  • 4 medium sweet potatoes, peeled and sliced into 1-inch rounds (about 2 lbs)
  • ¼ cup butter, melted
  • ½ teaspoon salt
  • 2 tablespoons maple syrup
  • About 12 regular-sized marshmallows, halved
  • About 24 pecan halves


Instructions

  1. Preheat your oven to 425°F and grease a sheet pan with butter or nonstick spray.
  2. Place sweet potato rounds on the pan and drizzle melted butter over them. Toss until evenly coated.
  3. Sprinkle with salt to enhance flavor.
  4. Roast the sweet potatoes in the oven for about 20 minutes, then flip them to ensure even browning.
  5. Continue roasting for another 15-20 minutes until fork-tender.
  6. Remove from the oven and switch to broil.
  7. Drizzle maple syrup over the sweet potatoes and toss gently.
  8. Top with halved marshmallows.
  9. Broil for 1 to 3 minutes until toasted, watching closely to prevent burning.
  10. Press a pecan half into the top of each marshmallow and serve warm.

Notes

For added flavor, consider sprinkling cinnamon or nutmeg on the sweet potatoes before roasting. Store leftovers in an airtight container in the refrigerator.
