Description

Ingredients

  • 1 cup Mochiko (240 ml)
  • 3/4 cup water (180 ml)
  • 1 1/2 cups sugar (300 g)
  • 3/4 cup water (180 ml)
  • Katakuriko potato starch (or cornstarch)
  • Anko sweet red bean paste (optional)
  • Green Tea Ice Cream (optional)


Instructions

  1. Combine the Mochiko with 3/4 cup of water in a heat-resistant bowl, stirring thoroughly. If the mixture seems too dry, add extra water one tablespoon at a time.
  2. Place the bowl with the Mochiko mixture in a steamer and steam for 20 minutes.
  3. Simultaneously, heat 3/4 cup of water and sugar in a medium saucepan until the sugar completely dissolves, forming a sugar syrup.
  4. Move the steamed Mochi into a saucepan and, over medium-low to low heat, incorporate the sugar syrup while stirring continuously. Keep cooking until the syrup is fully absorbed and the Mochi turns sticky, ensuring it does not burn.
  5. Remove the hot Mochi from the saucepan and place it onto a baking sheet generously covered with cornstarch. Mold and slice according to your preference.

Notes

  • For a smoother texture, use Katakuriko potato starch for dusting the Mochi instead of cornstarch.
  • Add a dollop of Anko sweet red bean paste inside the Mochi for a traditional and sweet filling.
  • Serve the Mochi with a scoop of Green Tea Ice Cream for a refreshing and flavorful dessert combination.
