Ingredients
- – 1 1/2 cups (355 ml) sweet corn kernels (fresh, frozen, any)
- – 1/2 cup (120 ml) sweet corn (optional, refer notes)
- – 3 sprigs spring onions (fine chopped, separate greens & whites)
- – 1/4 to 1/3 cup (60-80 g) carrots (finely chopped)
- – 1/4 cup (60 ml) French beans (4 to 6 finely chopped)
- – 3 to 3 1/2 cups (710-830 ml) water or stock
- – 1 tablespoon (15 ml) vegetable oil
- – 1/2 to 3/4 tablespoon (7.5-11 ml) minced garlic
- – 1/2 to 3/4 tablespoon (7.5-11 ml) minced ginger – optional
- – 1 small green chili (deseeded & chopped, optional)
- – 1 1/2 tablespoon (22.5 ml) corn starch (corn flour, refer notes)
- – 1/2 teaspoon (2.5 ml) sugar
- – 1/3 teaspoon (1.5 ml) salt (adjust to taste)
- – 1/4 teaspoon (1.25 ml) crushed pepper
- – 1 teaspoon (5 ml) vinegar (optional)
Instructions
- ■ Wash the carrots, beans, and spring onions thoroughly, then chop them finely. Make sure to separate the greens from the whites of the spring onions.
- ■ Finely mince the peeled ginger and garlic. If using, remove seeds from the green chilies and chop them.
- ■ Blend half a cup of sweet corn kernels with four tablespoons of water to form a smooth puree. This step can be skipped, but it adds a wonderful flavor.
- ■ Warm vegetable oil in a pot or wok. Cook the minced ginger, garlic, and green chili until they release their aroma, for about 30 to 40 seconds.
- ■ Add the white part of the spring onions and sauté for about a minute. Then incorporate the carrots and beans, cooking for another 2 minutes.
- ■ Introduce the sweet corn kernels and corn puree to the mix, then sprinkle in salt and sugar. Pour in water or stock and stir everything together.
- ■ Allow the soup to reach a vigorous boil, then lower the heat and let it simmer for 2 minutes.
- ■ While the soup simmers, blend one and a half tablespoons of corn starch with four tablespoons of water. Add this mixture to the simmering soup.
- ■ Stir the soup, boiling it until it begins to thicken. Keep in mind it will continue to thicken as it cools. Taste and add more salt if needed.
- ■ Finally, add the green parts of the spring onions, crushed pepper, and, if desired, vinegar. Pour the sweet corn soup into serving bowls.
