Description

Delightful sweet chili shrimp wrapped in crisp lettuce, perfect for gatherings and quick meals.


Ingredients

  • 500g (about 1 lb) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ⅓ cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp fresh lime juice
  • ½ tsp chili flakes (optional)
  • Salt & black pepper, to taste
  • 1 cup green cabbage, shredded
  • ½ cup purple cabbage, shredded
  • 1 small carrot, julienned
  • 2 tbsp green onions, chopped


Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes.
  4. Stir in sweet chili sauce, soy sauce, honey, lime juice, chili flakes, salt, and pepper. Cook for another 2-3 minutes until the shrimp are well coated in the glaze.
  5. In a bowl, combine shredded green and purple cabbage, julienned carrot, and chopped green onions to make the slaw.
  6. To assemble, place a spoonful of the shrimp mixture into a lettuce leaf and top with the crunchy slaw. Serve immediately.

Notes

Prepare the slaw ahead of time for better flavor. Use crisp lettuce leaves like romaine for the best texture.
