Ingredients
- 1 lb (454 g) boneless chicken thighs or chicken breast
- 1/3 cup (80 ml) cornstarch or potato starch, add more if needed
- 1/3 cup (80 ml) vegetable oil or any neutral oil
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) garlic powder
- 1/4 teaspoon (1 ml) black pepper
- 1 green onion finely chopped for garnish (optional)
- 1/2 cup (120 ml) sweet chili sauce
- 1 tablespoon (15 ml) sriracha (optional)
- 1 tablespoon (15 ml) honey plain kind
- 1 tablespoon (15 ml) rice vinegar or apple cider vinegar / white vinegar
- 1 teaspoon (5 ml) lime juice or lemon juice, freshly squeezed
- 1/2 teaspoon (3 ml) lime zest or lemon zest, freshly grated
Instructions
- Mix the sauce components in a small dish and set it aside.
- Cut the chicken thighs into pieces that are about 1.5 inches and place them in a big bowl.
- Sprinkle the chicken with salt, garlic powder, and black pepper. Then, coat the chicken evenly with cornstarch, making sure every piece is covered. Add additional cornstarch if necessary.
- In a large, sturdy pan or wok, heat the vegetable oil over medium heat. Cook the chicken in small portions, turning them halfway, until they are crispy and golden, which should take around 6-7 minutes in total. (Refer to the Notes section below if you wish to use an air fryer instead.)
- Take the cooked chicken out of the pan and place it on a wire rack or paper towels to drain any extra oil.
- Place the chicken in a big bowl, pour the sauce over it, and gently stir to combine. Top with green onions and enjoy!
