Ingredients

  • 1 lb (454 g) boneless chicken thighs or chicken breast
  • 1/3 cup (80 ml) cornstarch or potato starch, add more if needed
  • 1/3 cup (80 ml) vegetable oil or any neutral oil
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/4 teaspoon (1 ml) black pepper
  • 1 green onion finely chopped for garnish (optional)
  • 1/2 cup (120 ml) sweet chili sauce
  • 1 tablespoon (15 ml) sriracha (optional)
  • 1 tablespoon (15 ml) honey plain kind
  • 1 tablespoon (15 ml) rice vinegar or apple cider vinegar / white vinegar
  • 1 teaspoon (5 ml) lime juice or lemon juice, freshly squeezed
  • 1/2 teaspoon (3 ml) lime zest or lemon zest, freshly grated


Instructions

  1. Mix the sauce components in a small dish and set it aside.
  2. Cut the chicken thighs into pieces that are about 1.5 inches and place them in a big bowl.
  3. Sprinkle the chicken with salt, garlic powder, and black pepper. Then, coat the chicken evenly with cornstarch, making sure every piece is covered. Add additional cornstarch if necessary.
  4. In a large, sturdy pan or wok, heat the vegetable oil over medium heat. Cook the chicken in small portions, turning them halfway, until they are crispy and golden, which should take around 6-7 minutes in total. (Refer to the Notes section below if you wish to use an air fryer instead.)
  5. Take the cooked chicken out of the pan and place it on a wire rack or paper towels to drain any extra oil.
  6. Place the chicken in a big bowl, pour the sauce over it, and gently stir to combine. Top with green onions and enjoy!

  • Evenly coat chicken pieces with cornstarch for a crispy texture.
  • Adjust sweet chili sauce amount to suit your spice preference.
  • Increase lime juice and zest for a tangier flavor; add sriracha for extra heat.
